
One of my least favorite things in the kitchen is peeling hard-boiled eggs. It’s a tactile reaction of little “crumblies” of shell that get left on the egg that totally gross me out and make me feel an entirely irrational amount of rage. To add insult to injury – fresh eggs are notoriously difficult to peel and are exponentially more infuriating than those of their store-bought companions. Scour the internet and you will find “solutions” to cooking hard-boiled eggs easily, with the best results for peel-ability, with extra ingredients you already have in your panty…they are liars.
Ok maybe they’re not liars but in my experience, these hard-boiled eggs have NEVER peeled easily and drive me crazy. Enter Fresh Eggs Daily and her solution to easy-peel hard-boiled eggs….spoiler alert: it’s steam! And while I admire Lisa and am inspired by her empire, I am a self proclaimed lazy bum and would like to avoid any excess energy expenditure if I can help it. So I’ve found a solution that requires minimum effort and maximum results…Instant pot magic!
Seriously, this method is SO easy and the results are consistent and delicious!
Step One:
Wash your eggs. You don’t want to steam poop…gross.
Step Two:
Use your Instant Pot trivet and layer the eggs in a single layer.
Step Two:
Add 1 Cup of water to the Instant Pot.
Step Three:
Pressure cook for 3-4 minutes (normal settings), then natural release for 4 minutes – longer if you are cooking more than 12 eggs.
Step Four:
Carefully remove eggs.
Done. Seriously! Peel (carefully because the eggs will be very hot) and enjoy!
